Campus dining program becomes the first higher education establishment to offer specialized portion sizes

PUEBLO, Colo. – Qdoba at Colorado State University Pueblo has expanded its dining options with the introduction of lunch mini-bowls and dedicated kids’ menu items. It’s a significant step for the popular Mexican food chain’s approach to campus dining. The new offerings enhance the standard Qdoba menu typically found at college campus locations. 

The lunch mini-bowls provide students, staff, and visitors with right-sized portions perfect for lighter appetites or those looking for a quick meal between classes. Meanwhile, the new kids’ menu addresses the needs of campus families and younger diners visiting the location.

“I’m excited to share that Qdoba will be expanding its menu offerings to include lunch mini-bowls and kids’ menu options,” said Josh Gurley, Senior Director of Auxiliary Services. “This is not a standard offering at any Qdoba’s higher education accounts, so our specialness is validated.”

The menu expansion reflects Qdoba’s commitment to adapting its offerings to meet the unique demands of campus communities. The university’s dining services are focused on providing diverse options to accommodate varying schedules, dietary preferences, and family needs.

Campus dining has evolved considerably over the past decade, with students and visitors expecting restaurant-quality food that fits their specific lifestyle requirements. The mini-bowl option addresses feedback from diners who wanted Qdoba’s signature flavors in a more manageable size.

Both menu additions are now available during regular operating hours. The mini-bowls feature the same customizable options as full-size bowls, including a choice of protein, rice, beans, and toppings. The kids’ menu offers simplified versions of popular items designed with younger palates in mind.
